How To Make Cauliflower Pizza Recipe

I often get asked how to make cauliflower rice, cauliflower pizza dough and if both taste good?
To be honest cauliflower rice and dough do not taste as good as the gluteny filled real things however, cauliflower as a replacement does make you feel so much better.
I would say the taste and texture is 7.5/10 but the feeling after eating cauliflower as a gluten free rice or dough substitute takes the overall rating to at least a 9/10 compared to the real thing.
I love pizza, fried rice and anything that has gluten in it so I can't tell you it is the same taste but it definitely is worth it!

Ingredients

  • 1 head of cauliflower medium sized
  • 1 large egg
  • 1 tsp salt
  • 1/2 cup parmesan cheese

Optional (to help dry out crust)

  • 1/2 cup corn flour can add 1-2 tbsp of corn starch as well if you have it

Toppings

  • 1/2 cup low moisture mozzarella cheese shredded
  • 1/2 cup pizza sauce
  • Your favorite pizza toppings light toppings best

Instructions

  • Preheat oven to 475 degrees.

Create Cauliflower Rice/Couscous

  • Break cauliflower into florets or cut into smaller chunks
  • Put into food processor or multiple blade blender. Can also use a box grater to grate down into the couscous like consistency.

Dry Cauliflower

  • Put cauliflower into cheesecloth or clean dish towel and wring the cauliflower as much as possible to get is as dry as possible. Do this multiple times.
    I even suggest afterward patting it down and lightly squeezing with paper towel to absorb even more moisture.
  • If you have time you can even just put the cauliflower in the oven for 10-15 minutes to dry it out more.

Make Dough

  • Take your very dry cauliflower and mix in egg, salt, oil, parmesan cheese and if you want to add into corn flour as well as starch.
  • Mix together with your fingers like a standard pizza dough.
  • If you have parchment paper you can use that on top of a baking sheet to bake the dough initially.
    If not, put dough onto a greased pizza stone or baking sheet and flatten with rolling pins or your hand to be quite flat around 1/4 inch thick dough.
    Get it to resemble a thin crust pizza as much as you can. Use corn flour to help prevent sticking.

  • Bake the crust for 12-15 minutes. You want it over-cooked vs. undercooked.
  • Let cool for for 5 minutes.
  • Remove parchment paper if you used it. Then put dough onto greased baking sheet or pizza stone.
  • Add your toppings. Pizza sauce first, then cheese, then your other toppings.
  • Put back in oven for 15 minutes.
  • Remove from oven, let cool, cut and serve. You may want to eat with a fork and a knife as you tinker with getting that firmer texture.
