Easy Lamb Rib Dinner Recipe With Wine Sauce

Ingredients

Meal

  • 2 racks lamb ribs
  • 2 ears fresh corn on cob
  • 2 large broccoli stalks
  • Fresh parmesan cheese

Meat & Vegetable Marinade

  • 2/3 cup olive oil
  • 2/3 cup balsamic vinegar
  • 1 1/2 tbsp rosemary leaves
  • 2 tsp honey
  • 2 tsp minced garlic
  • 2 tsp thyme leaves
  • 2 tsp coarse salt
  • 2 tsp black pepper
  • 1/2 tsp oregano

Wine Sauce

  • 1 cup pinot noir
  • 2 lemons juiced
  • 1/4 cup salted butter

Instructions

Meat Prep

  • Pull membrane off ribs and score the meat. See body of article on how to score meat.

Marinade

  • In a bowl combine oregano, thyme leaves, salt, pepper and rosemary. Then add in olive oil, balsamic vinegar, garlic and honey.
    Brush half over the ribs, save a little to brush again when cooking.
    In a bowl pour/brush the other half over your vegetables and marinade them while meat cooks.

Cooking On Grill - Oven Works As Well

  • Cook ribs at 250F for one hour. Flip meat at 30 minutes and brush extra marinade on meat.
  • While ribs cook, combine wine sauce ingredients into a container.
  • After ribs have cooked for one hour, place the ribs fat side down into a preheated dutch oven or grill/oven safe pan or on aluminum foil.
  • Turn heat up to 300 F. Pour in wine mixture and close the lid or cover with foil. Cook ribs for one more hour. Cook for two hours if you want them well done.
  • When there is 20 minutes left on the ribs cook time, add the vegetables to the grill.

Finishing Touches

  • Grate parmesan cheese over vegetables and sprinkle parsley on ribs to taste.
